Wheat starch
Today, wheat starch manufactured for the food industry has different levels of purity. Only the purest wheat starch can be used in products intended for consumers with coeliac disease. These products must be labelled ”Glutenfree” or ”Very Low Gluten”. Wheat starch in products that are not labelled “Glutenfree” or “Very Low Gluten” has a lower level of purity, which means the products are not always suitable in a gluten-free diet. Content may be a key factor in this case.

Use of wheat starch in gluten-free bread makes the bread taste more like normal bread. Many people are diagnosed with coeliac disease after years of eating normal bread. Being able to eat bread based on wheat starch, which makes it resemble normal bread, is crucial in achieving a positive attitude to, or experience of, a gluten-free diet, and may also help you keep to a strict diet. In Sweden, Finland, Germany and the UK, coeliac patients have been consuming wheat-starch-based products for over 40 years.
