This recipe for a gluten-free Caesar salad contains everything you’d expect: a delicious dressing, cos lettuce and gluten-free croutons made with Fria’s Farmhouse Loaf. A delicious gluten-free Caesar salad is a popular choice any day of the week. It works as well for a summer brunch as a relaxed dinner party with friends.

Ingredients

  • Caesar dressing:
  • 2 egg yolks
  • 5 anchovy fillets
  • 1.5 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove
  • 100 ml finely grated Parmesan cheese
  • 300 ml neutral oil
  • salt
  • freshly milled black pepper
  • Croutons:
  • 4 slices of Fria Gluten-free Farmhouse Loaf
  • Half a garlic clove
  • 3 tbsp butter
  • 1 tsp salt flakes
  • Finely chopped herbs
  • Salad:
  • 2 heads of cos lettuce
  • 50 g Parmesan cheese shavings
  • Crispy bacon

HOW TO MAKE IT

  • Caesar dressing:
    Combine the egg yolks, anchovy fillets, freshly squeezed lemon juice, Dijon mustard and garlic using a hand blender or in a food processor. With the mixer still running, add the oil in a thin stream. Stir in the finely grated Parmesan cheese. If the mayonnaise becomes too thick, add a little water. Season with salt and freshly milled black pepper.

  • Croutons:
    Cut the crusts off the bread. Cut the bread into small cubes. Rub the surface of a frying pan with half a garlic clove. Add the butter and fry the bread over a medium heat until it is a lovely golden colour. Sprinkle with the salt flakes. Toss the freshly cooked croutons in finely chopped herbs.

  • Coat the cos lettuce in the dressing. Top with the croutons, crispy bacon and Parmesan cheese shavings. Enjoy the salad on its own or serve as an accompaniment to salmon or fried chicken.
