RECIPE FOR GLUTEN-FREE VEGETARIAN EGG SALAD
A "Gubbröra" is a classic Swedish egg salad typically served at Christmas time. The basis of the recipe is usually a full-flavoured fish, such as herring. But a vegetarian egg salad is just as good, and what’s more, it’s gluten-free. This recipe for gluten-free vegetarian egg salad is quick to make and absolutely delicious.

Ingredients
- 4 slices of Fria White Toast, thawed
- Egg salad:
- 2 hard-boiled eggs, chopped
- 2 tbsp capers, roughly chopped
- 2 tbsp fresh dill, finely chopped
- 1 small red onion, finely chopped
- 1 tbsp Turkish yoghurt
- 1 tbsp mayonnaise
- pinch of salt
- freshly milled black pepper
HOW TO MAKE IT
Mix all the egg salad ingredients well in a bowl. Toast four slices of Fria’s gluten-free White Toast and cut them diagonally. Distribute the egg salad on the gluten-free bread slices and garnish with fresh dill.
